The Master Grade I.O. Shen 3021 Heavy Cleaver is a professional-grade cutting tool engineered for chefs who demand exceptional performance when breaking down light bones, meat, and dense vegetables. At the heart of its construction is Triplex Steel Technology, where a super-hard ERDON steel core at Rockwell 62 is sandwiched between two layers of softer ERDON 10 steel, eliminating the brittleness of single-steel blades while maintaining a razor-sharp, long-lasting edge. Each knife is hand-finished by a master craftsman to a precise 15 edge angle, requiring an average of 7 hours of finishing work per piece. The full-tang design is paired with a heat-resistant ebonite handle featuring an artisan Yin Yang-inspired inlay, delivering superior grip stability and a distinguished aesthetic. Backed by a 5-year manufacturer warranty, the 3021 sets the benchmark for heavy cleavers in a professional kitchen.
