The Master Grade I.O. Shen 5024 is a 9 / 230 mm professional carving knife engineered for precision and versatility in both restaurant and home kitchens. Its slender, flexible blade excels at filleting fish, slicing poultry, and carving roasts with clean, moisture-preserving cuts. Built with proprietary Triplex Technology, the blade sandwiches an ultra-hard ERDON 62 steel core between two layers of softer ERDON 10 steel, overcoming the brittleness typically associated with hard steel while maintaining a razor-sharp edge. Each knife is hand-finished to a precise 15 angle, requiring an average of 7 hours to perfect. The distinctive Yin Yang ebonite handle is durable, heat-resistant, and ergonomically balanced for confident control during demanding tasks.
